Braised Prawns
Recipe
Ingredients

1 1/2 tbsp/22 ml Chinese
wine, or whiskey

1 1/2 tbsp/22 m rice
vinegar
-
1 tbsp/15 ml water
-
Salt, pinch
-
1 inch/2.5 cm of fresh
gingerroot, sliced 1/4 inch/5mm thick
-
2 green onions, cut
into 2 inch/5 cm lengths

2/3 cup/150 ml sugar
-
1/4 cup/60 ml oil
-
1 1/2 lbs/750 g large
prawns,
trimmed, with shells left on

Method:

Combine the Chinese
wine, rice vinegar, water and salt. Set aside.
Prepare all remaining ingredients and have at hand.

Preheat a wok over medium-high heat and add the
oil. When the oil is hot, add the ginger and green
onion and stir-fry for 10 seconds.

Carefully add the
wine mixture along with the sugar. Stir until the
sugar is dissolved and the mixture is boiling.

Add the prawns and stir to coat well. Continue to
cook, boiling vigorously. while stirring
occasionally to ensure the prawns cook evenly.

Reduce the sauce to a sticky glaze that coats the
prawns. Do not allow the sauce to scorch. Serve.
