Cantonese Fried Rice
Recipe
Ingredients
-
3 tbsp/45 ml oil
-
15 large shrimp,
peeled and halved lengthwise
-
1 cup/250 ml slivered
barbecued pork, or any cold leftover cooked meat
-
1/2 cup/125 ml finely
shredded white or green
onion
-
3 cups/750 ml leftover
cooked rice
-
2 large eggs, beaten
-
1 tsp/5 ml salt
-
Salt, sugar and white
pepper to taste

Coarsely chopped fresh
coriander and green onions for garnish
Seasoning:
-
1 tbsp/15 ml Chinese
wine, or whiskey
-
2 tsp/10 ml cornstarch
-
1/4 cup/60 ml chicken
stock, heated
Serves
4
Method:
-
Prepare all ingredients and have at hand. Marinate
the shrimp with the cornstarch and wine for 15
minutes.

Heat a wok or large frying pan over high heat and
add the oil. As soon as the oil begins to form a
haze, add the marinated shrimp and stir-fry briefly
until they change color.

Add the barbecued pork and
continue to stir-fry until heated through. Add the
green onion and salt and stir-fry until fragrant (1
to 2 minutes maximum).

Add the rice. Stir-fry
until the rice is well mixed with the shrimp, pork
and green onion.
Add the stock, a little at a time gently stirring
until all the stock has been absorbed.

Add the beaten egg in the same
manner, and continue to cook the mixture until
the rice grains separate and the egg is cooked.

Taste and adjusling
adding salt, sugar or white pepper as desired.
Garnish and
serve.
