Asian Recipes - Coconut Rice Recipe

Ingredients

  • 2 1/2 cups/625 ml long grain rice, washed and drained

  • 2 cups/500 ml coconut milk

  • 3 cups/750 ml water

seasoning:

  • pandan leaves

  • 1/2 inch/1 cm cube of fresh ginger root, finely chopped

  • 1/2 small shallot onions, finely chopped

  • 1 small clove garlic, finely chopped

  • 1 small stick cinnamon

  • 1 cloves

  • 1 tsp/10 ml salt

Serves 4


Method:

  1. Prepare all ingredients and have at hand. Clean the pandan leaves and tie each one in a knot.

  2. In a heavy pan, combine all ingredients and seasonings. Bring the mixture to a boil uncovered, stirring occasionally. Continue to cook the mixture, boiling for 3 to 4 minutes. Be sure to stir to prevent scorching.

  3. Reduce the heat to low and cover the pan. Continue to cook the rice for 15 to 20 minutes without uncovering the pan.

  4. Open the pan and gently fluff the rice with a fork. Remove the pandan leaves, cinnamon stick and cloves. Cover the pan again and let the rice stir for 10 to 15 minutes before serving.
