Cucumber Relish
Recipe
Ingredients

1 shallot onion, diced
-
1 small carrot, peeled
and diced
-
1/2 English cucumber,
seeded and diced
-
2 to 3 chilies finely sliced
(optional)
-
1.2 cup/125 ml white vinegar
-
3/4 cup/175 ml
white sugar

Salt, pinch
Serves

Method:

Prepare all
ingredients and have at hand. In a small
non-reactive bowl, mix the shallot onion, carrot,
cucumber and chilies. Set aside.

In a small,
non-reactive pan, combine vinegar, sugar and salt
and bring to a boil over high heat.

Pour the
boiling vinegar mixture over the vegetables. (They
should be completely immersed.) Let cool to room
temperature before using. (Any leftover can be in the refrigerator for up to
3 days.)

Serve as a relish
for grilled or fried foods.
