Asian Recipes - Peruvian Chinese Barbecued Chicken Recipe

Ingredients

  • 1 Medium chicken split down the back, or 1 to 2lbs/500 g to 1 kg chicken thighs

  • 3 tbsp/45 ml honey

  • 3 tbsp/45 ml peanut oil

  • 6 tbsp/90 ml black vinegar

  • 3 tbsp/45 ml dark soy sauce

  • 1 tbsp/15 ml chili paste, or 4 red chilies pounded to a paste

  • 1 tsp/5 ml sesame oil

  • 4 tbsp/60 ml cumin powder

  • 2 tsp/10 ml coriander powder

  • 1/2 tsp/2 ml garam masala

  • 1 tbsp/15 ml salt

Serves 4


Method:

  1. Prepare all ingredients and have at hand. Combine the seasoning ingredients and mix well.

  2. Open the chicken so that it lays flat. Trim away any loose skin or fat and cut off the wing tips. Marinate the chicken in the seasoning in a non-reactive dish for 2 hours or overnight.

  3. Preheat a grill or barbeque. Grill the chicken over a medium fire until done (35 to 40 minutes) or roast the chicken in an 375F/190C oven until done, about 1 hour.

  4. Allow the chicken to rest on a platter for 10 minutes before serving.
