Fresh lettuce leaves, slices of
cucumber, tomato wedges,
sprigs of fresh parsley and wedges of
shallot onion for garnish
Seasoning:
1 clove garlic, minced
1 coriander root,
minced
1 tsp/5 ml turmeric
powder or
a small piece of fresh
turmeric root
1
tsp/5 ml sugar
Salt to taste
1 tbsp/15 ml vegetable
oil
Serves 4
Method:
Soak 15 to 20 small wooden skewers in a glass of
water for 1 hour minimum.
In a mortar and pestle
or small blender or food processor, pound or grind
the garlic and coriander root together. Add the
remaining seasoning ingredients and mix well.
Mix
the prawns with the seasoning mixture and marinate
for at least 30 to 40 minutes. Meanwhile, preheat a
grill or barbecue.
Thread the prawns lengthwise
on the skewers. Grill or barbecue 5 to 7 minutes
until done.
Serve immediately on a garnished
plate, accompanied by Thai cucumber relish (refer
recipe) or your favorite hot sauce.
