Asian Recipes - Shred Salmon with Thai Fragrant Rice
Recipe
Ingredients
3 cups/750 ml
freshly cooked rice
1/4 cup/50 ml coconut milk powder
1/4 cup/50 ml combined, finely diced
sweet red and
yellow peppers and thinly sliced
green onion
12 slices of salmon,
1/2 inch/l1 cm thick each
Seasoning:
2 tsp/10 ml
dried chili flakes
2 tbsp/30 ml fresh lime juice
4
tsp/20 ml fish sauce
4 to 5 tsp/20 to 25 ml sugar
1 to 2 tsp/5 to
10 ml lemon grass, finely minced
Serves 4
Method:
In a non-reactive bowl combine the seasoning
ingredients and stir well until the sugar dissolves.
Preheat a non-stick frying pan over high heat and
when hot fry the salmon pieces until bronze colored,
turning them over once only.
Meanwhile, prepare the
rice. Combine the freshly cooked rice with the
coconut powder and diced vegetables.
Lightly dress
the rice with a few teaspoons of the seasoning per
person. Press about 3/4 cup/175 ml of hot rice into
a small cup or bowl for each person and then un-mold
onto a warm plate.
Arrange the cooked salmon beside
the rice and serve.
