Thai Fried Rice with Pork
Recipe
Ingredients
-
3 tbsp/45 ml vegetable
oil
-
1/2 to 3/4 lb/250
to 375 g lean minced pork
-
1/3 cup/75 ml snow peas, sliced
-
1/2-inch/2.5 cm long on
the diagonal
-
3 to 5 cups/750 to
1250 ml leftover cooked rice, grains
separated
-
4 large eggs
-
Salt, sugar, and
pepper to taste
-
Fresh lettuce leaves,
slices of cucumber, tomato wedges, sprigs
of fresh coriander and wedges of lime for garnish
Seasoning:
-
2 tbsp/30 ml minced
garlic
-
1 to 2 tbsp/15 to 30 ml
fish sauce
-
2 tsp/10 ml freshly
ground black pepper
Serves
4
Method:
-
Prepare all ingredients and have at hand.

Heat a
wok or large frying pan over high heat and add the
oil. As soon as the oil begins to form a haze, add
the minced garlic.

When the garlic turns golden, add
the minced pork. Stir-fry the pork until it is
cooked through and begins to brown.

Add the snow
peas and fry until they turn bright green. Add the
fish sauce and pepper and stir.

Add the rice and
stir-fry until heated through. Taste the mixture and
adjust the seasoning by adding salt, sugar, fish
sauce or ground pepper as desired.

Turn off the
heat. Keep the rice warm while you fry the 4 eggs
sunny side up.

Serve the fried rice on individual
plates with a fried egg and other garnish.
