Asian Recipes - Thai Green Papaya Salad
Recipe
Ingredients

1 green papaya, about
1 3/4 to 2 lb/700
g to 1 kg, peeled, seeded and grated
-
1 large carrot, peeled
and grated
-
1/4 lb/125 g green
beans, trimmed and cut into 1-in/2.5 cm pieces
-
2
tomatoes, diced
-
2 tbsp/30 ml
roasted peanuts, coarsely chopped for garnish
-
1 to 2 tbsp/15 to 30 ml ground dried shrimp
-
1 to 3 fresh chilies
-
3 to 4 cloves garlic
-
3 to 4 tbsp/45 to 60 ml fresh lime
juice
-
2 to 3 tbsp/30 to 45 ml fish sauce
-
1 tbsp/15 ml sugar

Method:
-
Prepare all
ingredients and have at hand. In a mortar and pestle
pound the chilies and garlic into a rough paste.

Add
some of the green beans and bruise them with the
pestle. Add more beans and pound them lightly to mix
them with the garlic and chilies.

Transfer the
bean-chili mixture and remaining green beans to a
non-reactive bowl. Add the green papaya and mix
well. Using the pestle, gently bruise the
papaya-bean mixture.

Combine the fresh lime
juice. fish sauce and sugar and stir well until the
sugar dissolves. Combine with the green bean mixture
and add the carrot and tomatoes. Toss well.

Taste
and adjust the seasoning, adding more lime juice,
fish sauce or sugar as desired. Garnish and serve.
