Asian Recipes - Thai Grilled Fish Recipe

Ingredients

  • 4 fish steaks, about 1/2 lb/250 g each

Spice Paste:

  • 1 tbsp/15 ml coarsely chopped lemon grass

  • 1 tbsp/15 ml coarsely chopped coriander root

  • 2 tsp/10 ml coarsely chopped galanga

  • 2 to 4 red chilies, coarsely chopped

  • 2 tbsp/30 ml coarsely chopped dill stems

Seasoning:

  • 1 tbsp/15ml palm sugar or brown sugar

  • 2 tbsp/30 ml fish sauce

  • Coarse salt to taste

  • Fresh juice of 1 lime

  • 3 tbsp/45 ml oil

Serves 4


Method:

  1. Prepare all ingredients and have at hand. Using a mortar and pestle or a small blender or food processor, pound or grind the spice paste ingredients in the order given until they form a coarse paste. Combine the spice paste with the seasoning ingredients and mix well.

  2. Marinate the fish in the spice-paste-seasoning mixture in a non-reactive dish for 2 to 4 hours. Preheat a grill or barbecue.

  3. Grill the fish over a medium-hot fire until done (6 to 8 minutes per side) about 10 to IS minutes.
