Grilled Fish
Recipe
Ingredients
Spice Paste:
-
1 tbsp/15 ml coarsely
chopped lemon grass
-
1 tbsp/15 ml coarsely chopped
coriander root
-
2 tsp/10 ml coarsely chopped galanga
-
2 to 4 red chilies,
coarsely chopped
-
2 tbsp/30 ml coarsely
chopped dill stems
Seasoning:

Method:

Prepare all ingredients and have at hand. Using a
mortar and pestle or a small blender or food
processor, pound or grind the spice paste
ingredients in the order given until they form a
coarse paste. Combine the spice paste with the
seasoning ingredients and mix well.

Marinate the
fish in the spice-paste-seasoning mixture in a
non-reactive dish for 2 to 4 hours.
Preheat a grill or
barbecue.

Grill the fish over a medium-hot fire
until done (6 to 8 minutes per side) about 10 to IS
minutes.
