Asian Recipes - Thai Grilled Prawn Salad

Ingredients

1 ripe papaya, peeled,
seeded and cubed

1 tbsp/15 ml fresh
mint, coarsely chopped

1 tbsp/15 ml fresh coriander,
coarsely chopped

1 lb/500 g medium-size
prawns, peeled with tails on

2 tsp/10 ml salt
-
1 tbsp/15 ml oil
-
Crushed roasted
peanuts, coarsely chopped green onion, fresh
coriander and thinly sliced red chilies for garnish
Seasoning:
-
2 tbsp/30 ml
fish sauce
-
5 tbsp/75 ml fresh lime
juice
-
2 tsp/10 ml sugar
-
3 shallot onions,
thinly sliced
-
2 stalks of lemon
grass, very thinly sliced
-
2 red chilies, thinly
sliced

Method:

Prepare all ingredients and have at hand. Toss the
prawns with the salt and allow them to sit for 10
minutes while you make the seasoning.

Combine the
fish sauce, lime juice, sugar, shallot onions, lemon
grass and chilies. Stir well until the sugar
dissolves.

Grill the prawns (refer
grilled prawn
instructions for grilling).

Pour the grilled prawns
and any juices into a non-reactive bowl. Add the
papaya, mint, coriander and the fish sauce
mixture.

Gently toss the salad. Garnish and serve.
This dish is wicked fun for entertaining. I like to
get all the ingredients organized ahead of time and
then put it all together with friends while having a
drink before dinner in the kitchen. Try it some
time; you'll be famous in your own home.
