Asian Recipes - Thai Stir-Fried Mushrooms with Cashew Nuts Recipe

Ingredients

  • 3 tbsp/45 ml vegetable oil

  • 2 cans (14 oz/398 ml) straw mushrooms, drained and sliced in half or 1/2 lb/250 g fresh mushrooms, sliced

  • 1/2 cup/125 g raw cashew nuts

  • 2 tsp/10 ml cornstarch dissolved in 1 tbsp/15 ml water

  • Sliced green onion to garnish

Seasoning:

  • 1 tsp/5 ml salt

  • 14 tsp/1 ml white pepper

  • 1 tbsp/15 ml fish sauce.

  • 14 cup/60 ml vegetable or chicken stock or water

  • 3 cloves garlic, coarsely chopped

  • 2 small green chilies, minced

Serves 4


Method:

  1. Combine the salt, white pepper, fish sauce and stock in a small bowl. Prepare all remaining ingredients and have at hand.

  2. Preheat a wok over medium-high heat. Add the oil and a moment later add the cashew nuts. Stir-fry the cashews until golden brown. Quickly and carefully remove them from the oil and set aside.

  3. Add the garlic and chilies to the hot oil and stir-fry a few seconds while they impart ,heir flavor to the hot oil. Add the mushrooms and stir-fry for 1 to 2 minutes.

  4. Add the stock and fish sauce mixture and bring to boil. Return the fried cashews to the wok and stir.

  5. Stir the cornstarch and water mixture into the boiling sauce to thicken it. Garnish and serve.
