Ingredients

2 tablespoons oil

3 spring onions
(chopped)

1 garlic clove
(finely chopped)

1 small red chili
(seeded and chopped)

900g/2lb minced steak
-
3 large tomatoes
-
100g/4oz seedless raisins
-
Salt and pepper
Serves 6
Method:

Heat the oil in a large, deep frying pan and add the
spring onions, garlic and chili.

Cook for 2 minutes
over a moderate heat or until the spring onions have
softened but not colored. Add the meat and cook
until it is browned allover.

Place the tomatoes in
a bowl of just-boiled water for 30 seconds and skin.
Chop and add to the frying pan with the raisins,
salt and pepper and simmer uncovered for 25 minutes
or until cooked. Serve hot with plain boiled rice.
