Ingredients

  • 4 thick slices white bread (crusts removed and cut into cubes)

  • 3 rashers smoked bacon (chopped)

  • 1 cos lettuce (leaves torn into pieces)

  • 50g/2oz Parmesan cheese (grated, plus extra to garnish)

For the dressing:

  • 4 anchovies in oil (drained)

  • 1 egg

  • 2 tablespoons lemon juice

  • 1 garlic clove (crushed)

  • 125ml/4fl oz olive oil

  • Salt and pepper

Serves 4


Method:

  1. Preheat the oven to 190°C/375°F/Gas mark 5.

  2. Spread the bread on a baking tray and bake for 15 minutes, until golden. Cook the bacon in a frying pan over a medium heat until it is crisp. Drain on kitchen paper.

  3. Put the lettuce leaves in a serving bowl with the bread cubes, bacon and Parmesan cheese.

  4. For the dressing, process the anchovies, egg, lemon juice and garlic in a blender or food processor for 20 seconds, or until smooth. With the blender still rotating, add the olive oil in a thin stream until the dressing is thick and creamy.

  5. Season with salt and pepper and drizzle over the salad. Sprinkle with extra Parmesan and serve immediately.
