Ingredients

  • 8 cannelloni tubes

  • 100g/4oz spinach

For the filling:

  • 1 tablespoon oil

  • 175g/6oz minced beef

  • 2 garlic cloves (crushed)

  • 25g/1oz plain flour

  • 125ml/4 fl oz beef stock

  • 1 small carrot (finely chopped)

  • 1 small yellow courgette (chopped)

  • Salt and pepper

For the sauce:

  • 25g/1oz butter

  • 25g/1oz plain flour

  • 225ml/8fl oz milk

  • 50g/2oz Parmesan cheese (grated]

Serves 4


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4.

  2. For the filling, heat the oil in a large pan. Add the minced beef and garlic. Cook for 5 minutes. Add the flour and cook for a further 1 minute. Slowly stir in the stock and bring to the boil.

  3. Add the carrot and courgette, season well and cook for 10 minutes. Spoon the mince mixture into the cannelloni tubes and place in an ovenproof dish.

  4. Blanch the spinach in boiling water for 3 minutes. Drain well and place on top of the cannelloni tubes.

  5. For the sauce, melt the butter in a pan. Add the flour and cook for 1 minute. Pour in the milk, add the grated cheese and season well.

  6. Bring to the boil, stirring all the time. Pour over the cannelloni and spinach and cook for 30 minutes in the preheated oven. Serve with tomatoes and a crisp green salad.
