Ingredients

350g/12oz egg
noodles
-
3 tablespoons
vegetable oil
-
700g/1 1/2lb lean beef steaks (cut into
thin strips)

150g/5oz green
cabbage (shredded)
-
75g/3oz bamboo shoots
-
6 spring onions
(sliced)
-
25g/1oz green
beans (halved)
-
1 tablespoon soy
sauce
-
2 tablespoons beef
stock
-
1 tablespoon dry
sherry
-
1 tablespoon brown
sugar
-
2 tablespoons
chopped fresh parsley
Serves 4
Method:
-
Cook the noodles in a saucepan of boiling water for
2 to 3 minutes. Drain well, rinse under cold running
water and drain thoroughly again.

Heat 1 tablespoon of the oil in a preheated wok or
frying pan until it is really hot. Add the noodles
and stir-fry for 1 to 2 minutes. Drain the noodles
and set aside until required.

Heat the remaining
oil in the wok. Add the beef and stir-fry for 2 to 3
minutes.

Add the cabbage, bamboo shoots, spring
onions and beans to the wok and stir fry for 1 to 2
minutes. Add the soy sauce, beef stock, dry sherry
and brown sugar to the wok, stirring well.

Stir
the noodles into the mixture in the wok, tossing to
mix well. Transfer to serving bowls, garnish with
parsley and serve immediately.
