Ingredients

100g/4oz dried
shrimps
-
50ml/2fl oz groundnut oil
-
225g/8oz pork (cubed)
-
3 spring onions
(finely chopped)
-
3 garlic cloves (crushed)
-
1/2 teaspoon dried
shrimp paste
-
2 red chilies (seeded and finely
chopped)
-
100g/4oz white
cabbage (finely sliced)
-
100g/4oz bean sprouts
-
1 tablespoon white
sugar
-
3 tablespoons soy
sauce
-
225g/8oz rice
noodles (cooked as instructed on the packet)

1 leek (finely
sliced)
Serves 4-6
Method:
-
Soak the dried
shrimps in cold water for 2 hours. In a wok or
cast-iron frying pan, heat the groundnut oil to
smoking point, then stir-fry the pork for 2 minutes
or until brown.

Add the shrimps, onion, garlic,
shrimp paste and chilies and stir-fry for another 2
minutes.

Add the cabbage,
bean sprouts, sugar and
soy sauce and stir-fry on a medium heat for another
minute.

Finally, mix in the noodles and
fry for a
further 2 minutes, stirring constantly.
