Ingredients

  • 3 large lemons

  • 2 garlic cloves (crushed)

  • 100ml/3 1/2fl oz olive oil

  • Freshly ground black pepper

  • 900g/2lb fresh tuna (cut into short strips)

Serves 8


Method:

  1. Take 2 of the lemons, finely grate the zest from one of them and squeeze the juice from them both. Mix with the garlic and oil and season well with pepper.

  2. Lay the tuna strips in a shallow dish, pour the marinade over them and turn the tuna to coat. Cover and leave for at least 30 minutes.

  3. Roll up the tuna strips and thread on a skewer, securing the ends. Repeat until you have 8 skewers with tuna.

  4. Cut the remaining lemon into 8 wedges and push one wedge on each skewer. Put in a container, pour the remaining marinade over the top, and chill until needed.

  5. Put the skewers under a hot grill or on a barbecue and cook for 2 to 3 minutes on each side, brushing with the marinade. Serve hot with rice.
