Ingredients

  • 2 red peppers (deseeded and cut into strips)

  • 1 habanero chili (finely chopped)

  • 2 onions (thinly sliced)

  • 3 tablespoons sunflower oil

  • 3 teaspoons cumin seeds

  • 3 teaspoons coriander seeds

  • 1/2 teaspoon salt

  • 1 teaspoon freshly ground black pepper

  • 4 skinless chicken breast fillets (cut into strips)

  • 12 flour tortillas

Serves 4


Method:

  1. Sweat the peppers, chili and onions over a low heat in the oil for 5 minutes, or until soft.

  2. Put the cumin seeds, coriander seeds, salt and pepper into a dry pan over a very low heat and toast them for 2 to 3 minutes, stirring. Grind to a powder with a pestle and mortar and sprinkle over the frying vegetables.

  3. Turn up the heat and add the chicken to the pan, tossing to cook for 3 to 4 minutes.

  4. Serve with tortillas, guacamole, sour cream and refried beans.
