Ingredients

8 chicken thighs
(skinned)

2 tablespoons vegetable oil

3 tablespoons
brandy
-
300ml/1/2pt orange juice
-
3 spring onions
(chopped)

2 teaspoons
corn flour
-
2 teaspoons water
-
100ml/3 1/2fl oz fromage frats

Salt and pepper
Serves 4
Method:
-
Cook the chicken
pieces in the oil in a heavy-based pan, turning
until evenly browned. Stir in the brandy, orange
juice and spring onions.

Bring to a boil, then cover
and simmer for 15 minutes, or until the juices run
clear.

Blend the corn flour with the water then mix
into the fromage frais. Stir this into the sauce and
stir over moderate heat until boiling.

Adjust
the seasoning and serve with boiled rice or pasta.
