Ingredients

  • 450g/1lb chuck steak

  • 700g/1 1/2lb potatoes

  • 50g/2oz butter (plus extra to serve)

  • 1 large onion (chopped) 600ml/1pt water

  • Salt and pepper

  • 3 bay leaves

  • 6 peppercorns

  • 3 tablespoons chopped spring onions

Serves 4


Method:

  1. Cut the steak into 2.5cm/1in cubes. Peel the potatoes and cut into 2.5cm/1in cubes.

  2. Melt the butter in a large pan and add the chopped onion and meat. Cook gently, stirring, until the onion is tender but not browned.

  3. Add the water, a pinch of salt, bay leaves and peppercorns. Bring to the boil, cover and simmer for 1 1/2 hours.

  4. Add the potatoes and continue, simmering, half-covered, for a further 45 minutes, stirring, until the potatoes disintegrate to thicken the stew.

  5. Remove from the heat, sprinkle with the spring onions and season well. Serve with rye bread.
