Ingredients

  • Salt and pepper

  • Olive oil

  • 4 Dover sole, skin removed

  • 2 tablespoons capers, rinsed and drained

  • 2 tablespoons finely chopped marjoram

  • 2 lemons (cut into wedges)

Serves 4


Method:

  1. Preheat the oven to 220°C/425°F/Gas mark 7.

  2. Heat 2 flat oven trays, scatter them with salt and pepper and drizzle with the olive oil.

  3. Place the Dover sole on the trays. Scatter over the capers and marjoram, season and drizzle with olive oil.

  4. Put the trays in the oven and roast the fish for 10 to 15 minutes or until the flesh comes away easily from the bone when tested with a knife. Serve with lemon wedges.
