Ingredients

  • Shell and meat from 1 medium crab

  • Salt and pepper

  • 1 tablespoon lemon juice

  • 2 tablespoons fresh white breadcrumbs

  • 1 egg (hard-boiled)

  • 1 tablespoon chopped fresh parsley

Serves 2


Method:

  1. Using 2 forks, flake all the white meat from the crab, removing any shell or membrane. Season, adding about 1 teaspoon lemon juice.

  2. Pound the brown meat of the crab thoroughly and work in the breadcrumbs with the remaining lemon juice and seasoning.

  3. Using a spoon, put the white meat in both ends of the crab's empty shell, making sure it is well piled up with the inside edges kept neat. Then spoon the brown meat in a neat line down the centre, between the two sections of white crabmeat.

  4. Hold a blunt knife between the white and brown crabmeat and carefully spoon lines of parsley, sieved egg yolk and chopped egg white across the crab, moving the knife as you go to keep a neat edge. Serve on a bed of lettuce.
