Ingredients

  • Vegetable oil for deep-frying

  • 4 large cod fillets

  • 8 large potatoes (peeled and cut into chips)

For the batter:

  • 150g/5oz plain flour

  • 2 tablespoons olive oil

  • 1 1/2 egg whites

  • Sea salt

Serves 4


Method:

  1. To make the batter, sieve the flour into a mixing bowl and make a well in the centre. Pour in the olive oil, stir, and add enough water to make a batter about the consistency of double cream. Allow to stand for at least 1 hour.

  2. Just before frying, whisk the egg whites to a stiff peak and fold into the batter, adding a good pinch of sea salt.

  3. Heat the oil in a deep frying pan over a high heat or to 180°C/350°F. Dip the fish pieces into the batter one at a time, then fry until crispy and golden.

  4. Dip the chips in the oil until brown. Drain both the fish and chips on kitchen paper and serve hot.
