Ingredients
For the batter:

150g/5oz plain flour
-
2 tablespoons olive oil
-
1 1/2
egg whites
-
Sea salt
Serves 4
Method:

To make the
batter, sieve the flour into a mixing bowl and
make a well in the centre. Pour in the olive
oil, stir, and add enough water to make a batter
about the consistency of double cream. Allow to
stand for at least 1 hour.

Just before frying,
whisk the egg whites to a stiff peak and fold
into the batter, adding a good pinch of sea
salt.

Heat the
oil in a deep frying pan over a high heat or to
180°C/350°F. Dip the fish pieces into the batter
one at a time, then fry until crispy and golden.

Dip the chips in the oil until brown. Drain both
the fish and chips on kitchen paper and serve
hot.
