Preheat the oven to 180°C/350°F/Gas mark 4.

Heat 1
tablespoon of the oil in a frying pan. Add the
onions and garlic and sauté for 2 to 3 minutes. Add
the courgettes and cook for about 5 minutes or until
golden. Stir 2 tablespoons of thyme into the
mixture.

Place half of the onions and courgettes
in the base of a large ovenproof dish. Top with
the sardine fillets and half the Parmesan cheese.
Place the remaining onions and courgettes on top and
sprinkle with the remaining thyme.

Mix the eggs
and milk together in a bowl and season to taste with
salt and pepper. Pour the mixture over the
vegetables and sardines in the dish. Sprinkle the
remaining Parmesan cheese over the top.

Bake in
the oven for 20 to 25 minutes or until golden and
set. Serve immediately.
