Ingredients

  • 8 chicken thighs (skinned and boned)

  • 2 garlic cloves (finely chopped)

  • Juice of 2 lemons

  • Vegetable oil for deep-frying 

For the batter:

  • 100g/4oz plain flour

  • 2 eggs

  • 200ml/7fl oz lager

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 2 teaspoons dried oregano

  • 12 teaspoon chili flakes

  • 1/2 teaspoon black pepper

Serves 4


Method:

  1. Put the chicken thighs in a deep dish, add the garlic, pour over the lemon juice and toss to coat. Cover with Clingfilm and refrigerate overnight.

  2. Remove the chicken from the refrigerator and allow it to come to room temperature before cooking.

  3. To make the batter, in a mixing bowl mix the flour, eggs, lager, olive oil, salt, oregano, chili flakes and black pepper. Whisk until smooth and leave to stand for 1 hour at room temperature.

  4. Heat the oil for deep-flying and stir the batter. Wipe the marinade from the chicken and pat dry with kitchen paper, then coat in the batter.

  5. Fry the chicken in 2 batches, for about 8 minutes each, turning once. Serve hot.
