Method:

Preheat the oven to
160°C/325°F/Gas mark 3.

Wrap the joint in
aluminum foil, place in a roasting tin and cook for
3 hours, or until the juices run clear.

Remove the joint from the oven and raise the heat to
190°C/375°F/Gas mark 5.

With two large spatulas,
place the joint on a chopping board, leaving the
cooking liquid in the tin. Remove the skin, score
the flesh and spread with the mustard. Mix together
the breadcrumbs and sugar and press firmly over the
joint.

Place the joint back
in the roasting tin and cover the exposed meat end
with aluminum foil. Pour the apple juice around the
joint.

Bake for 30 to 40 minutes, or until golden
brown. Baste the breadcrumbs several times during
cooking, being careful not to dislodge them. Remove
the joint from the oven and leave to cool before
slicing.
