Ingredients

1 green chili
(seeded and finely chopped)

1 small bunch of
fresh mint (finely chopped)

1 garlic clove
(finely chopped)

1/2 bunch spring
onions (chopped)

Juice of 2 limes
-
Salt and pepper

450g/1lb lamb
fillet (cut into large cubes)
Serves 4
Method:

Mix together the chili, mint, garlic and spring
onions in a bowl. Add the lime juice and season with
salt and pepper.

Mix well, add the lamb cubes and
toss to ensure they are thoroughly coated in the
marinade. Cover the bowl with Clingfilm and
refrigerate overnight.

Preheat the grill to a high heat. Thread the lamb
onto metal skewers and grill for 8 to 10 minutes,
turning once. Serve hot, on a bed of rice.
