Ingredients

  • 4 pork sausages

  • 1 tablespoon vegetable oil

  • 2 tomatoes

  • Salt and pepper

  • Knob of butter

  • 4 thick slices white pudding

  • 4 thick slices black pudding

  • 4 smoked back bacon rashers

  • 4 smoked streaky bacon rashers

  • 4 eggs

Serves 4


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4.

  2. Prick the sausages and fry in oil over a medium heat until golden all over. Drain and keep hot.

  3. Cut the tomatoes in half, put on to a heatproof plate and season with salt and pepper. Place a little blob of butter on each tomato, cover loosely with greaseproof paper and cook in the oven for 5 to 10 minutes.

  4. Fry the puddings gently on both sides and drain on kitchen paper. Cut the rinds off the rashers and fry until just crisp in a very hot pan.

  5. Finally heat a little bacon fat or butter in a clean pan, crack the eggs and cook on a gentle heat as desired. Divide everything between 4 plates and serve immediately.
