Ingredients

  • 4 red peppers (deseeded)

  • 3 spring onions

  • 3 garlic cloves

  • 3 bay leaves (crushed)

  • 2 teaspoons brown sugar

  • 1kg/3lb pork shoulder (thickly sliced)

Serves 4


Method:

  1. In a blender or food processor, blend all the ingredients except the pork to create a smooth paste seasoning. Cut slits in the pork and generously rub in the seasoning, ensuring that all the meat is covered. Leave to marinate for 8 to 12 hours.

  2. Preheat the oven to 180°C/350°F/Gas mark 4.

  3. Place the meat in a steamer and cook for 30 minutes. Transfer the steamed pork to a roasting tin and cook in the oven for 1 1/2 hours or until well cooked and blackened. Serve with rice.
