Method:

In a blender or food processor, blend all the
ingredients except the pork to create a smooth paste
seasoning. Cut slits in the pork and generously rub
in the seasoning, ensuring that all the meat is
covered. Leave to marinate for 8 to 12 hours.

Preheat the oven to 180°C/350°F/Gas mark 4.

Place
the meat in a steamer and cook for 30 minutes.
Transfer the steamed pork to a roasting tin and cook
in the oven for 1 1/2
hours or until well cooked and
blackened. Serve with rice.
