Ingredients

  • 450g/1lb lamb loin fillet (thinly sliced)

  • 1 tablespoon mild curry paste

  • 150ml/1/4pt coconut milk

  • 2 cloves garlic (crushed)

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon cumin

For the satay sauce:

  • 1 tablespoon corn oil

  • 1 onion (diced)

  • 6 tablespoons crunchy peanut butter

  • 1 teaspoon tomato puree

  • 1 teaspoon lime juice

  • 100ml/3 1/2fl oz cold water

Serves 4


Method:

  1. Place the lamb in a large dish. Mix together the curry paste, coconut milk, garlic, chili powder and cumin. Pour over the lamb, toss well, cover and marinate for 30 minutes.

  2. To make the satay sauce, heat the oil in a large wok and stir-fry the onion for 5 minutes, then reduce the heat and sweat the onions for a further 5 minutes. Stir in the peanut butter, tomato puree, lime juice and water.

  3. Thread the lamb on to wooden skewers, reserving the marinade. Grill the skewers under a hot grill for 6 to 8 minutes, turning once.

  4. Add the reserved marinade to the wok, bring to the boil and cook for 5 minutes. Serve the lamb skewers with the satay sauce.
