Ingredients

  • 900ml/1 1/2pt water

  • 6 fresh mackerel (heads removed, gutted and cleaned)

  • 1 teaspoon salt

For the sauce:

  • 2 egg yolks

  • 1 teaspoon French mustard

  • 2 teaspoons dried mixed herbs

  • 175g/6oz butter

Serves 6


Method:

  1. To make the sauce, whisk the egg yolks in a bowl with the mustard and herbs.

  2. Bring the butter to the boil in a small pan and pour in onto the egg yolks, whisking continuously until the sauce thickens. Keep warm in a covered bowl.

  3. Bring the water to the boil and add the mackerel and the salt. Bring back to boiling point, cover and remove from the heat. After about 5 to 8 minutes, check to see if the mackeral is cooked.

  4. When it is, carefully remove it from the water, lift the fillet off the bone and place on a serving plate. Coat with the sauce. Serve with new potatoes.
