Ingredients

  • 3 garlic cloves (chopped)

  • 1 onion (chopped)

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon sweet paprika

  • 1/2 teaspoon ground ginger

  • 1 kg/2 1/2lb minced lamb

  • 3 tablespoons chopped fresh mint

  • 3 tablespoons chopped fresh coriander

  • Salt and pepper

  • 12 large vine leaves

  • Olive oil

Serves 6


Method:

  1. Put the garlic, onion and spices in a blender or food processor and blend to form a paste. Add the lamb and herbs and blend again until mixed. Season with salt and pepper.

  2. Divide the mixture into 12 and, with damp hands, roll into large sausage shapes.

  3. Rinse and dry the vine leaves on kitchen paper. Wrap each sausage in a leaf and skewer through the middle, 2 per skewer. Brush generously with oil and place on a grill rack.

  4. Grill or barbecue under medium heat for 4 to 5 minutes on each side. Serve with rice.
