Ingredients

  • 1 tablespoon vegetable oil

  • 4 lean beef steaks

  • 1 small onion (chopped)

  • 175g/6oz mushrooms (wiped with damp kitchen paper and sliced)

  • 2 tablespoons Worcestershire sauce

  • 125ml/4fl oz beef stock

  • 3 teaspoons corn flour

  • 2 tablespoons chopped fresh parsley

Serves 4


Method:

  1. Heat a heavy-based pan on a high heat. Brush oil onto both sides of the steaks. . To seal, cook the steaks for 2 to 3 minutes on each side. Continue frying until cooked to your personal preference and remove from the heat.

  2. Add the onion and mushrooms to any pan juices and cook for 1 minute. Add the Worcestershire sauce, stock and corn flour.

  3. Bring to the boil, stirring constantly, until slightly thickened. Add the parsley and any juices from the steak. Serve with the steamed vegetables and mashed potatoes.
