Ingredients

2 tablespoons
vegetable oil

3 rashers of
smoked back bacon (diced)

1 medium onion (finely
chopped)

500ml/18fl oz milk
-
1 large potato
(diced)
-
600ml/1pt water
-
1/2 teaspoon salt
-
10 fresh clams in
their shells (washed)
Serves 2
Method:

Heat the oil in a saucepan and brown the bacon.
Remove the bacon from the oil and set aside. Sauté
the onion in the oil for 3 to 4 minutes over a
medium heat.

Add half the milk, all the potato, the
water and the salt, then lower the heat and boil for
about 10 minutes, until the potato is soft.

Add
the remaining milk and the clams. Cover and cook for
another 5 to 10 minutes until the clams are cooked
and the shells open. Discard any unopened clams.

Sprinkle some bacon on each helping and serve hot.
