Ingredients

2 teaspoons olive
oil
-
8 pigeon breasts
For the plum sauce:
-
250g/9oz canned
plums in syrup
-
1 tablespoon clear
honey
-
1 tablespoon soy
sauce
-
1 teaspoon
Worcestershire sauce
-
1/2 teaspoon
Tabasco sauce
-
1/4 teaspoon ground
cardamom
-
Salt
and pepper
Serves 4
Method:

To make the sauce,
put all the ingredients, except the salt and pepper,
in a small saucepan and bring to the boil over a
moderate heat. Simmer for 5 minutes, then remove
from the heat and leave to cool.

Once the sauce
has cooled, pour it into a blender or food processor
and blend until completely smooth. Check the
seasoning, adding salt and pepper if necessary, and
transfer to a small bowl. Cover and chill in the
refrigerator.

Heat the oil in a non-stick frying
pan and pan-fry the pigeon breasts for 3 to 4
minutes on each side until tender.

To serve, slice the
pigeon breasts and drizzle with plum sauce.
