Ingredients

  • 1 white cabbage

  • 1 1/2 tablespoons olive oil

  • 2 partridges

  • 100g/4oz lardons

  • 2 large carrots (sliced)

  • 1 large onion (sliced)

  • 2 garlic cloves (chopped)

  • 2 bay leaves

  • 4 juniper berries (crushed)

  • 500ml/18fl oz chicken stock

Serves 4


Method:

  1. Preheat the oven to 170°C/325°F/Gas mark 3.

  2. Quarter the cabbage and cut out the tough stem. Shred the leaves finely and pile into a bowl. Pour over enough boiling water to cover, leave for 1 minute then drain thoroughly. Make a bed of cabbage in the bottom of a casserole dish.

  3. Heat the olive oil in a frying pan and brown the partridges all over. Place in the casserole dish. Fry the lardons in the same fat then add the carrots and onion and fry until golden brown.

  4. Scoop into the casserole dish. Add the garlic, bay leaves and juniper berries, and pour in enough stock to come about halfway up the dish. Cover and cook in the oven for 2 hours.
