Ingredients

1 pheasant
-
2 small onions
(quartered)

3 celery sticks (thickly sliced)

2 red apples (thickly sliced)

125ml/4fl oz
chicken stock
-
1 tablespoon clear honey
-
2 tablespoons Worcestershire sauce Ground nutmeg

Salt
and
pepper
Serves 4
Method:

Preheat the oven to
180°C/350°F/Gas mark 4.

Sauté the pheasant without fat in
a non-stick pan, turning occasionally until
golden. Remove and keep hot.

Sauté the onions and celery in the pan to brown
lightly. Spoon into a casserole dish and place the
pheasant on top. Tuck the apple slices around it.

Spoon over the stock, honey and
Worcestershire sauce. Sprinkle with nutmeg,
salt and pepper, cover and bake for
1 1/2
hours or until tender. Serve hot with roast
potatoes.
