Ingredients

100ml/3 1/2fl
oz tablespoons oil

teaspoons dried chili flakes

4 garlic doves
(crushed)

1 teaspoon salt

900g/2lb raw
medium prawns in their shells

75g/3oz butter
-
50ml/2fl oz lemon juice
Serves 4
Method:

Place the oil, chili flakes, garlic and salt in a
large glass bowl and mix well.

Peel the prawns,
leaving the tails intact and removing the dark vein.
Stir the prawns into the chili mixture, cover and
refrigerate for 3 hours, stirring and turning
occasionally.

Preheat the grill to very hot. Place
the prawns in a single layer on a baking tray and
brush with any of the remaining oil and chili
mixture. Grill for about 5 minutes, or until tender.

Melt the butter with the lemon juice in a small
pan and pour into a serving jug.

Serve the prawns
hot, drizzled with the lemon butter, with boiled
rice.
