Ingredients

  • 4 pork chops

  • 2 tablespoons olive oil

  • A sprig of rosemary

  • 200ml/7fl oz medium-sweet Marsala

  • 4 strips of lemon zest

  • 1 tablespoon lemon juice

  • Salt and pepper

Serves 4-6


Method:

  1. Pat the chops dry with kitchen paper. Put the olive oil in a large frying pan and then brown the chops slowly on both sides.

  2. Pour off the excess fat, turn the heat down and add all the remaining ingredients. Simmer, half-covered, for 20 minutes, turning the chops once.

  3. Discard the rosemary and lemon zest. Remove the chops from the pan and keep warm. Boil the juices remaining in the pan until they are reduced to a thin layer on the base.

  4. Taste and season, pour over the chops and serve.
