Ingredients

  • 350g/12oz potato

  • 350g/12oz cooked fresh salmon (flaked)

  • 225g/8oz smoked salmon (roughly chopped)

  • 1 tablespoon lemon juice

  • Freshly ground black pepper

  • 75g/3oz butter (melted)

  • 3 tablespoons chopped fresh dill

  • 2 eggs (beaten)

  • 225g/8oz dried white breadcrumbs

  • Vegetable oil for frying

Serves 4


Method:

  1. Cut the potatoes into small cubes and boil until tender, then mash. Mix the fresh and smoked salmon in a large bowl with the mashed potato, lemon juice, pepper to taste, butter and dill. Add just enough beaten egg to bind the mixture together so it is firm. Cool, then refrigerate for 1 hour until very firm.

  2. Shape the mixture into 16 cakes about 2.5cm/1in thick. Brush with some of the remaining beaten egg and coat with breadcrumbs. Chill for 30 minutes until firm. Coat the cakes with egg and crumbs once more. Chill again until firm.

  3. Shallow fry the cakes in batches for 3 to 4 minutes on each side, or until golden brown. Drain on kitchen paper and keep warm in the oven. Serve with chips.
