Ingredients

  • 450g/1lb lean lamb (finely minced)

  • 1 large onion (grated)

  • 2 garlic cloves (crushed)

  • 1 green chili (seeded and chopped)

  • 1 teaspoon ground cumin

  • 1/2 teaspoon salt

  • 1/2 teaspoon freshly ground black pepper

  • Grated zest and juice of 1 lemon

  • Vegetable oil

Serves 4


Method:

  1. Thoroughly blend all the ingredients except the oil in a bowl. Lightly cover and chill for 1 hour.

  2. Divide the meat mixture into 16 pieces and shape each piece into a tight oval shape. Place 4 meat rolls on a skewer and brush with vegetable oil. Repeat with all the meat.

  3. Barbecue or cook under the grill for 10 minutes, turning frequently. Serve with pitta bread and rice.
