Ingredients

450g/1lb lean lamb
(finely minced)

1 large onion (grated)
-
2 garlic cloves
(crushed)
-
1 green chili
(seeded and chopped)
-
1 teaspoon ground cumin
-
1/2 teaspoon salt
-
1/2 teaspoon freshly
ground black pepper
-
Grated zest and
juice of 1
lemon
-
Vegetable oil
Serves 4
Method:
-
Thoroughly blend all the ingredients except the oil
in a bowl. Lightly cover and chill for 1 hour.

Divide the meat mixture into 16 pieces and shape
each piece into a tight oval
shape. Place 4 meat rolls on a skewer and brush with
vegetable oil. Repeat with all the meat.

Barbecue
or cook under the grill for 10 minutes, turning
frequently. Serve with pitta bread and rice.
