Ingredients

450g/1lb salmon
fillet (diced)

100g/4oz smoked salmon (diced)

2 teaspoons
English mustard
-
Juice of 1 lemon
-
1 tablespoon
capers (rinsed, drained)

2 shallots (finely
chopped)
-
Small bunch of
chives (finely chopped)
-
Salt and pepper
-
150ml/1/4pt double
cream
Serves 4
Method:
-
Put the salmon fillet and smoked salmon in a mixing
bowl and add the mustard, lemon juice, capers,
shallots and chives.
-
Season with a little salt and
lots of pepper and refrigerate for 2 to 4 hours.
-
Whip the cream to soft peaks and fold the tartare
into it. Serve with rice.
