Ingredients

  • 450g/1lb salmon fillet (diced)

  • 100g/4oz smoked salmon (diced)

  • 2 teaspoons English mustard

  • Juice of 1 lemon

  • 1 tablespoon capers (rinsed, drained)

  • 2 shallots (finely chopped)

  • Small bunch of chives (finely chopped)

  • Salt and pepper

  • 150ml/1/4pt double cream

Serves 4


Method:

  1. Put the salmon fillet and smoked salmon in a mixing bowl and add the mustard, lemon juice, capers, shallots and chives.

  2. Season with a little salt and lots of pepper and refrigerate for 2 to 4 hours.

  3. Whip the cream to soft peaks and fold the tartare into it. Serve with rice.
