Ingredients

50g/2oz peeled and
cooked prawns

50g/2oz cooked ham
-
3 eggs
-
1 teaspoon salt
-
2 spring onions
(finely chopped)

4 tablespoons
vegetable oil
-
100g/4oz green peas
-
1 tablespoon soy
sauce
-
1 tablespoon dry sherry
-
450g/1lb cooked
Serves 4
Method:
-
Pat dry the prawns with kitchen paper. Dice the ham
into small pieces, about the same size as peas.

In
a bowl, lightly beat the eggs with a pinch of salt
and a few pieces of spring onion.

Heat about half
of the oil in a preheated wok, stir-fry the peas,
prawns and ham for 1 minute, then add the soy sauce
and sherry. Remove and keep warm.

Heat the remaining
oil in the wok and lightly scramble the eggs. Add
the rice and stir to make sure that the grains are
separated.

Add the remaining salt and spring onions
and the prawn mixture. Blend well and serve either
hot or cold.
