Ingredients

4 x 175g/6oz lean
rump steaks
-
4 egg yolks (in
half shell)

1 red onion
(finely chopped)

4 tablespoons
small capers (rinsed)

8 small pickled gherkins
(finely chopped)

4 tablespoon
chopped fresh parsley
-
8 anchovy fillets (finely
chopped)
-
Dijon mustard, to serve
-
Worcestershire
sauce, to serve

Tabasco sauce, to serve
Serves 4
Method:

Trim the steaks and chop finely with a sharp knife.
Pile the meat from one steak in the centre of each
plate. Nestle the egg yolk in its shell in the
centre.

Place little mounds of onion, capers,
gherkins, parsley and anchovies around the meat.
Serve straight away, with mustard and sauces to
accompany.
