Ingredients

  • 2 sirloin steaks Vegetable oil

  • 2 tablespoons dry sherry

  • 2 tablespoons soy sauce

  • 2 tablespoons sweet sherry

  • 1 teaspoon sugar

Serves 2


Method:

  1. Cover the base of a heavy frying pan with a thin film of oil and place over a high heat. When it is very hot, place the steaks in the pan. Turn after 3 minutes, then spoon over the dry sherry. Cover the pan for a final 2 minutes.

  2. Transfer the steaks to a warm plate and cover to keep warm. Add the remaining ingredients to the pan and boil until reduced by half.

  3. Return the steaks to the pan with any juices, and cook for 1 minute, turning once.
