Ingredients

• 2 tablespoons lemon juice

• 2 tablespoons brown sugar

• 1 teaspoon grated root ginger

• 2 teaspoons soy sauce

• Black pepper

• 8 chicken drumsticks (skinned)

Method:

1. In a large bowl, mix together the lemon juice, sugar, ginger, soy sauce and pepper.

2. With a sharp knife, slash the chicken drumsticks about 3 times through the thickest part, then toss the chicken in the glaze.

3. Cook the chicken under a grill, or on a barbecue, turning occasionally and brushing with the glaze, until the chicken is golden and the juices run clear.

4. Serve on a bed of lettuce with crusty bread.
