Ingredients

For the patties:

  • 225g/8oz minced beef

  • 100g/4oz fresh whole meal breadcrumbs

  • 4 spring onions (sliced)

  • 1 garlic clove (crushed)

  • 1 teaspoon chili powder

  • 2 tablespoons oil

  • Salt and pepper

For the sauce:

  • 25g/1oz plain flour

  • 150ml/1/4pt dry white wine

  • 50ml/2fl oz vegetable stock

  • 125ml/4fl oz double cream

  • 100g/4oz tiger prawns in their shells

For the croutes:

  • 4 slices white bread

  • 25g/1oz butter

Serves 4


Method:

  1. For the patties, mix the minced beef with the breadcrumbs, spring onions, garlic and chili powder. Season well and form into four equal rounds.

  2. Heat the oil in a frying pan and cook the patties for about 7 minutes, turning them frequently. Remove the patties from the frying pan and keep to one side.

  3. For the sauce, add the flour to the frying pan and cook for 1 minute. Gradually pour in the wine, stock and cream, then add the prawns. Cook for 5 more minutes, stirring all the time.

  4. For the croutes, stamp out 4 x 10cm/4in rounds from the sliced bread. Melt the butter in a frying pan and add the bread. Cook for 2 to 3 minutes, turning once. Remove and reserve. Place the patties on the croutes and spoon the sauce on top.
