Ingredients

  • 2 tablespoons vegetable oil

  • 2 garlic cloves (finely sliced)

  • 350g/12oz lean pork (sliced into thin strips)

  • 1 small red onion (sliced)

  • 2 tablespoons fish sauce

  • 1 tablespoon granulated sugar

  • Black pepper

  • 1 red pepper (seeded and diced)

  • 1/2 cucumber (seeded and sliced)

  • 2 plum tomatoes (cut into wedges)

  • 100g/4oz pineapple (cut into small chunks)

  • 2 spring onions (cut into short lengths)

Serves 4


Method:

  1. Heat the oil in a wok or large frying pan. Add the garlic and fry until golden, then add the pork and stir-fry for about 4 to 5 minutes.

  2. Add the onion and season with the fish sauce, sugar and pepper. Stir and cook for 3 to 4 minutes or until the pork is cooked.

  3. Add the rest of the vegetables, the pineapple and the spring onions. Continue to stir-fry for another 3 to 4 minutes. Serve hot.
