Ingredients

  • 1 tablespoon dry mustard

  • 6 tablespoons brown sugar

  • 4 large pork chops

  • 175ml/6fl oz lemon juice

  • Salt and pepper

Serves 4


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4.

  2. Mix the mustard and sugar and dust over the chops. Pour lemon juice over, cover and cook in the oven for 20 minutes.

  3. Take the lid off, raise the temperature to 190°C/375°F/Gas mark 5 and cook for a further 20 minutes, or until the chops look browned. Serve hot.
